The Story Behind Yumi Stroopwafel
From a small kitchen in Thailand to a beloved home for authentic Dutch stroopwafels & artisanal treats.
Meet Umi Madiyoh
In early 2021, Umi was working at a Dutch bar restaurant in Thailand when COVID hit. As the business closed and she lost her job, she turned to YouTube to study stroopwafel recipes — searching for the right equipment and discovering which local Thai ingredients could recreate that authentic Dutch taste.
With persistence and guidance from Dutch chefs based in Phuket, Thailand, she refined and optimised her recipe until the taste was just right. Waffle after waffle, she found her craft.
During the lockdowns, Umi sent free stroopwafels to friends and potential customers just to make them happy. People became curious — who made these? Are they for sale? That was the beginning of Yumi Stroopwafel. In April 2026, Umi decided to move her bakery to Jomtien, Pattaya to be more centrally located to her customers.
How the Flavours Were Born
Caramel Stroopwafel
The original — warm caramel stroop between two thin buttery waffle layers. The recipe that started it all.
Choco Caramel Stroopwafel
After perfecting the classic caramel stroopwafel, Umi created the Choco Caramel Stroopwafel — adding Dutch pure chocolate to the dough. The waffle turns slightly bitter, but the sweet caramel filling creates a beautiful, balanced contrast.
Strawberry Stroopwafel
She then crafted the Strawberry Stroopwafel — a unique and special flavour adored by everyone who loves strawberries.
